Christmas is coming and we can’t avoid thinking of special drinks: wines, liquors, craft beers…
I personally can’t forget about our wonderful cava.
Because effectively in Spain we have this delight, a sparkling wine with its own Designation of Origin. The cava region embraces different territories in Spain although the main area (not meaning to belittle the rest of regions) would definitely be the village of Sant Sadurní D’Anoia (Alto Penedés, Barcelona), also known as the “cava capital”.
It is unquestionably in Catalonia where we find the biggest number of cava wineries, even though there are quite a few spread through the rest of the Spanish territory which also produce this great drink. We can find some of them in Extremadura, Requena, Haro or Aranda de Duero.
In this article we have prepared an infographic that shows very clearly the classification of the cava, the types of grape necessary not only for the base wine production but for the cava itself, the categories according to the corresponding ageing time in casks and obviously the possible pairings.
